Alain Ducasse , the 21-star Michelin chef who runs more than forty restaurants in France and abroad, is opening his vegan burger kiosk today in Paris’s Bastille district.
And since it’s street food, Alain Ducasse is innovating by offering this vegan burger bar through a street kiosk called Burgal, located at 12 Place de la Bastille. It will be open Tuesday through Sunday from 11 a.m. to 9 p.m.
To delight our taste buds, the great chef has decided to tackle the emblem of street food, the burger, but in a plant-based version. To replace the steak, he decided to opt for vegetable patties made with zucchini, parsnips, carrots, lentils, onion, and quinoa. This will allow customers to indulge while consuming in a healthy, sustainable, and plant-based way.
As for sides and desserts, the Chef has also decided to stand out by offering vegetable or chickpea chips instead of fries and a chocolate mousse instead of the usual cookie or donut.

Alain Ducasse was already one of the pioneering chefs in terms of vegetarian offerings. In fact, he began offering a vegetarian menu in 1996 at his restaurant Le Louis XV in Monte Carlo, Monaco. On September 6, he also opened the Sapid restaurant , whose dishes are 95% vegan.
